In southern Austria, in Styria, pumpkin seed oil is a true institution: people there like to call it “black gold”. It all began in the 19th century, when a pumpkin whose seeds have no hard hull appeared in the region. There was no longer any need to shell them: they simply had to be lightly roasted and pressed.
